Consider this your weekly (daily?) reminder that really delicious food doesn’t have to be complicated.

The basics – garlic, lemon, herbs, olive oil – are ready to deliver. They are usually somewhere in the pantry or refrigerator, and they will always serve us well.

I give you Piece A: The Lemon Herb Pasta Salad with pickled Chickpeas which consists of deliciously viscous pasta coated in a silky “sauce” of olive oil and lemon juice, mixed with chickpeas that have soaked in an aromatic bath of fresh garlic and herbs and the like, and finished with more herbs and lots of salt and pepper and Parmesan. Is it really hot? Is it really cold? Is it good as a side dish or as a main course or as a snack snack? The answer to all of the above is Y-E-S.

That’s all you need:

  • Soft, tender and suitable pasta with noodles
  • Hearty chickpeas
  • Olive oil
  • Lemon juice
  • Basil and persil
  • Salt and pepper
  • Parmesan cheese

Thank you for understanding the amount of effort I am willing to put in at the moment (minimal) and the delicious results I expect in return (major).

It has served me so well on both levels.

“Pickled chickpeas” is how fancy you feel, but all it really is is to give a touch of garlic/lemon/herb flavor in the whole thing with very little effort.

First, take the ingredients from your pantry. DeLallo to the end.

We work with fewer ingredients here, so QUALITY MATTERS! Authentic Italian pasta with a phenomenal texture, a good solid olive oil that, in fact, tastes like olive oil, and a can of chickpeas that never fails, and you’re halfway there.

The chickpeas are … pickled. Spending the night would be ideal, but lol. If you are short on time, I promise you that your mouth will always be satisfied with the work that has been done. Just let the chickpeas hang out with all their flavors while you prepare the rest. If you are daring, give them a little puree with a fork so that they absorb a little more flavor.

Mix with herbs and cheese and salt and pepper and lemon zest and the other good things you like…
